Supper Freek's Nectarine Salad

Hello there! This is a simple but delicious salad that we serve on Supper Freek summer's in the air event and our colorful summer menu, the secret? Good produce: ripe nectarines & great tasting tomatoes are key to the success of the salad. Our good friend Joana Saramago who is a very talented photographer helped us with the pics of the food.



Ingredients for 6 people

- 4-5 ripe nectarines
- 20-25 cherry tomatoes (you can use different kinds and colors of tomatoes)
- 1 small onion
- 1 bunch of basil
- 4 tablespoons of extra virgin olive oil
- 2 tablespoons of balsamic vinegar
- Salt & Pepper


Cut the tomatoes in half and the nectarines and onion in relatively thin wedges.
Mix all together in a bowl & add salt and pepper, cover the bowl with plastic film and put in the fridge for at least an hour so you can get a lovely mix of tastes and aromas.
Before you serve add the basil and make a little vinaigrette by mixing the olive oil the balsamic vinegar.
Goes really well with roasts and BBQ's, Enjoy!
